For the classic experience, the Waitomo Glowworm Caves — you are pulled through the Glowworm Grotto in a boat, in silence, and it has been a tourist attraction for over 130 years. Be careful with the third: Aranui Cave is sold alongside them at the same price as the Glowworm Caves and has no glowworms at all, because it has no water.

If you want to be in the river rather than above it, black water rafting takes you under the same glowworms on an inner tube — three hours for Black Labyrinth, five for Black Abyss. The Glowworm Caves tour is 45 minutes end to end — a walk through the upper chambers including the Cathedral, then the boat through the Glowworm Grotto. Ruakuri Cave is 1.5 hours, Aranui Cave is 1 hour, and the Ruakuri-plus-Aranui combo is about 2.5 hours. Comfortable closed shoes and a warm layer. The caves sit at a steady cool temperature year-round regardless of the weather outside, and the floors are damp, so trainers rather than sandals. For black water rafting you bring swimwear and a towel and the wetsuit is provided. There is nothing to hire and no dress code beyond being able to walk on wet stone.

The glowworms are there year-round and the caves hold the same temperature whatever the season, so there is no bad month for the thing itself. What changes is company: New Zealand's summer, roughly December to February, is the busiest, and the middle of the day is the busiest part of any day. An early or late departure booked ahead will put fewer people in your boat, which matters more here than at most attractions because the whole point is silence.
